During the British Raj, the local kings grew wealthy and powerful, and Rajasthan became a treasure house of culinary delights. Drawing on recipes from throughout the Indian Subcontinent, the preparation of food in the royal households became a very serious business, and raised to an art level, with each recipe a closely guarded secret. At the Rajasthan, it is our aim to reproduce a range and quality of dishes worthy of this heritage.
